Grapes destemmed by hand and gently pressed by feet, macerated for about 14-16 days. Spontaneous fermentation with native yeasts in concrete tanks. 

 

Medium Bodied, good acid, notes of sour cherry & black currant. Serve with roasts, stews, game, fondue, aged hard cheeses.
