100% Chenin Blanc from 45 year old vines

grown on flint, clay, tuffeau, limestone

spontaneous fermentation lasts for four to six weeks. The wine is then racked into old tonneaux (old wood barrels) and stainless steel tanks for two to three months aging on its fine lees.
The wine is lightly filtered then bottled for its second ferment. Aged an average of two years before disgorgement. one to two grams of RS.

dry, minerally, crisp. Slight white fruit.
