El Rosado de Padilla
-100% Monastrell from Alicante, Spain. A fruity, slightly heavier bodied rose wine.
-Notes of orange peel and rose, good texture from clay aging.
-Harvest in 15 kg plastic boxes. Total destemming and not crushed where the berries break slightly. Maceration with skins and seeds 3-4 hours. Then the drained must is put into clay jars of various dimensions where it ferments spontaneously, without the addition of sulfur and without temperature control. Once the fermentation is finished, the wine rests without racking it for 4 months in clay jars, from where it is bottled directly without clarifying or filtering and without adding sulfur.
